Italian Veal Soup

Ingredients

  • 1 lb. veal or beef, 1-inch cubes cut for stew
  • 2 c. beef broth
  • 8 c. cabbage, coarsely chopped
  • 2 stalks celery, cut into ½ inch pieces
  • 4 green onions, cut into ½ inch pieces
  • 2 cloves garlic, minced
  • 1 (14oz.) can diced tomatoes
  • 1 (8oz.) can tomato sauce
  • 1 bay leaf
  • ½ t. crushed rosemary
  • 1 t. Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cooking time 7-9 hours.
  2. Place all ingredients into a 4 quart or larger crock pot or slow cooker.
  3. Stir well. Cover; cook on low for 7-9 hours until meat is very tender.
  4. Remove bay leaf before serving.
Makes 4 servings of 2 ½ cups each

Hot and Sour Beef Soup

Phase 3

Ingredients 

  • 100 grams lean ground beef
  • 1 tbls. fresh grated ginger
  • 1 tbls hot pepper flakes (more if you like it hotter)
  • 1/4 C. braggs liquid aminos
  • 1 tsp. vinegar
  • 2 C. chopped cabbage
  • 1 C. canned diced tomatoes
  • 1 C. sliced green onions (tops and bottoms)
  • 1 stalk lemon grass..slit length wise
  • 2 cloves minced garlic
  • 1 tsp. lime juice
  • 2 C. water

Instructions 

  1. Brown the ground beef.
  2. Add the rest of the ingredients and simmer for 10 to 15 min.

Makes 2 very large servings. 200 calories per serving. If you’re not
mixing veggies, omit the onion and substitute onion powder. Count the
tomato as a fruit.


Thai-Style Garlic Beef

Phase 2

Ingredients

  • 3.5 oz 95% lean ground beef
  • Garlic (minced) to taste
  • Salt & pepper, or any seasoning allowed to taste
  • Cabbage (thinly shredded) [your allowed amount] 

Instructions

  1. Cook the beef thoroughly, then season it.
  2. Add the garlic and let it cook for a bit.
  3. Add the cabbage and more seasonings and mix everything together, add a little water and let it wilt as much as you like.

Turkey Chili

Phase 2

Ingredients

  • 3.5 oz ground turkey breast or lean 96/4 beef
  • 1/2 tsp. Liquid Aminos
  • Onion powder
  • 1/4 tsp powdered Stevia
  • 1/2 can low sodium diced tomatoes
  • Tones Seasonings to taste (garlic powder, paprika, red pepper, cayenne pepper, salt and pepper)

Instructions

  1. Brown your meat with the onion powder, Aminos, and stevia.
  2. Add your tomatoes and about 1/4 can of water.
  3. Add your seasonings and let simmer about 10-15 min.
  4. If you have some extra cals for the day fry an egg (with Pam) over easy and put that on top of the chili.

Roast Beef w/ Cucumber

Phase 2

Ingredients

  • 100 grams of grilled roast beef
  • ½ cucumber, grated coarsely
  • 1 dessert spoon of lemon juice
  • Pepper and salt

Instructions

  1. Roll up the slices of cooked roast beef and arrange them on a plate.
  2. Put the grated cucumber in a sieve and add a pinch of salt.
  3. Let the bitter liquid pour out of the cucumber for 10 minutes.
  4. Mix the cucumber with the lemon juice.
  5. Serve the cucumber together with the roast beef.
